Queen of Heart's Jam Tarts

These tarts are unbeatable at any tea table. They go down well with everyone I've met and are delightfully traditional. Make up a batch for a school fete and you'll be sure to go home with an empty tin.

Makes about 24.

Ingredients

225g plain flour

115g butter

A splash of cold water

Any flavour jam (or curd)

Method

1. Put the flour in a bowl (or food processor if you prefer).

2. Add the butter in chunks and rub together with the flour in your fingertips, until it looks like breadcrumbs.

3. Then add the water and form a ball.

4. Put it in the fridge for at least 10 minutes and then leave to get to room temperature before rolling out, about 0.5cm thick.

5. Cut into circles with a biscuit cutter and press into the tart tins.

6. Add a teaspoon of jam into each and bake for 15 mins.
