Honey Gingerbread men.

If you fancy an old favourite with a twist, then this gingerbread recipe using honey instead of golden syrup is perfect! The honey makes the biscutis sweeter but the fresh ginger gives them a kick! They are a delicious golden colour with a chewy middle.

Ingredients

75g softened butter

50g caster sugar

½ tsp bicarbonate of soda

50g honey

2 egg yolks

250g plain flour

½ tsp ground cinnamon

1 tsp grated ginger

Method

1. Preheat the oven to 180 degrees celsius.

2. Beat together the butter with the caster sugar until creamy.

3. Stir in bicarbonate of soda, honey and the egg yolks.

4. Sift in the plain flour and ground cinnamon and grated ginger then bring together with a wooden spoon.

5. Shape into a ball, then chill for 30 mins.

6. Roll out the ball, to about 1cm thick.

7. Use a cutter to shape the biscuits then place on greased baking sheets.

8. Bake for 10-12 mins until slightly risen and golden brown.

9. Cool on a wire rack, then decorate however.
