Birthday cupcakes

The liitle cakes are so easy to make. You can decorate them however you like but personally, I prefer them with just icing and no fancy design. They are perfect for a party or making afternoon tea just that little bit more special.

Ingredients

110g caster sugar

110g butter

A few drops of vanilla extract.

110g self raising flour

2 eggs

1-2 tbsp of milk

For the buttercream

140g butter

280g icing sugar

1-2 tbsp of milk

A few drops of food colouring

Method

Preheat the oven to 180 degrees Celsius.

Cream the butter and sugar.

Add the vanill extract, eggs, milk and flour and mix well

Pour into cupcake cases and bake for 10-12 mins until golden brown.

Leave to cool and then make the buttercream:

Combine the icing sugar, butter, milk and colouring of your choice.

Spoon into a piping bag and decorate your cakes, (or spread the icing on with a knife)!
