Autumn Apple Cake

This cake is a brilliant way of using up excess apples from the summer. It's a deliciously moist cake full of raisins, spices and soft apple pieces with a crunchy cinnamon topping. What more could you want?

Ingredients

2 medium eating apples

9 tbsp sunflower oil

150g caster sugar

3 medium eggs

100g raisins or sultanas

75g wholemeal flour

75g self raising flour

1 ½ tsp bicarbonate of soda

1 ½ tsp baking powder

1 ½ tsp ground cinnamon

1 tsp ground ginger

For the topping

2 tbsp demerara sugar

½ tsp ground cinnamon

Method

1. Preheat the oven to 180℃ / gas mark 4. Line a 27 x 18cm tin with baking paper.

2. Core the apples and cut into bite-sized chunks. (There is no need to peel them).

3. Put the sunflower oil in a large mixing bowl and add the caster sugar. Mix well.

4. Then add the eggs, one at a time, and beat into th mixture.

5. Put the chopped apple and raisins in too.

6. Sift both types of flour, the bicarbonate of soda, baking powder, cinnamon and ginger into the mixture.

7. Combine it all together, then pour into the prepared tin.

8. To make the topping, mix the sugar and cinnamon and sprinkle over the cake mix.

9. Bake for 45 minutes until well risen and firm.

10. Leave the cake in the tin fo 10 minutes then place on a wire rack to completely cool.
