Retro Bourbons
The humble Bourbon biscuit was invented in 1930 by a German: Dr. Hans Zehnloch, while working for Cadbury. The name is a contraction of their place of invention - BOURnville and Zehnloch's hometown - BONn.
With this simple recipe, you can make your own retro biscuits - perfect for teatime or even as a present!
Ingredients
For the biscuits (makes 24 - 30) -
350g plain flour
100g self raising flour
75g cocoa powder
125g granulated sugar
125g salted butter
125g golden syrup
1 large egg
For the filling
150g butter
200g icing sugar
2 tbsp cocoa powder
Method
For the biscuits -
1. Sift the flour and cocoa powder together into a mixing bowl, add the sugar and mix well.
2. Add the butter and rub into the flour and cocoa until it resembles breadcrumbs.
3. Make a well in the centre and pour in the golden syrup and egg.
4. Combine fully into a ball.
5. Roll out on a floured work surface, about 0.5cm thick - (too much flour makes the dough stiff) - and cut into 2cm by 4cm rectangles.
6. Arrange on a lined baking tray and bake for 20 mins at 170 degrees Celsius.
7. Leave to cool.
For the filling -
1. Cream the butter and icing sugar, then add the cocoa.
2. Spread some on top of one biscuit, then sandwich with another.
