Granola bars
I think this is my favourite recipe to date. These granola bars are packed full of oats, fruit and nuts to give you heaps of energy. They're super simple and brilliant to take on the go. Make up a batch at the weekend and you'll have delicious fuel for the week - if they last that long!
Ingredients
70g almonds
250 g rolled oats
40 g sunflower seeds
100 g runny honey
6 tablespoons peanut butter
15 dates (I used the deglet noor variety)
1 teaspoon ground cinnamon
100g raisins
Method
1. Preheat the oven to 180ºC and line a 22cm square baking tin.
2. Roughly chop the almonds then put them in a large baking tray with the oats and seeds.
3. Place the tin in the hot oven for 12 to 15 minutes, or until golden.
4. Meanwhile, gently heat the honey and peanut butter in a small pan over a low heat.
5. Split open the dates, pull out the stones, then place into a blender with 100ml of warm water.
6. Blitz to a paste then stir into the warmed honey mixture.
7. Transfer the toasted oat mixture to a large bowl with the cinnamon.
8. Roughly chop and stir in the raisins, then mix in the honey mixture until well combined.
9. Spoon it into the prepared baking tin and press into an even layer.
10. Bake for 15 minutes, or until golden and set.
11. Leave to cool before cutting into squares.
