Chocolate Pear Cupcakes
One of my favourite desserts is a chocolate pear tart that my Mum makes for special occasions so I thought I'd try out the combination in cake form. Unspurprisingly these cakes are absolutely delicious with the juicy pear complementing the pancake - like texture of the cake perfectly! This recipes is super simple and since no butter is used it takes only seconds to mix together by hand.

Ingredients - makes 6
100g self raising flour
2 tbsp caster sugar
2 eggs
100ml milk
3 tsp cocoa powder mixed with a splash of water
1 ripe pear
Method
1. Combine all ingredients, apart from the pear, in a bowl. (The mixture will be very runny but don't worry)!
2. Peel and core the pear, then chop into small chunks.
3. Pour the cupcake mixture into cases and then add 2 or 3 pieces of pear.
4. Bake at 200 degrees Celsius for about 15 minutes.
5. Best served hot!
