Wacky chocolate cake!!!

This cake is also known as 'Depression Cake' as it was often made during the Great Depression in America, which was a result of the stock-market crash in 1929. The cake contains no eggs or butter as they were either expensive or hard to come by and is therefore incredibly quick to put together. If you have any preconceptions about this cake then banish them because the end result is a gooey, chocolatey sponge! What more could you want?

The measurements are in cups I'm afraid because it's an American recipe so, although you can use a conversion table, I would recommend buying a set of cups as you're likely to want to make this cake again....and again!

Ingredients -

1 1/2 cups plain flour

1 cup sugar

1/4 cup cocoa powder

1/2 teaspoon salt

1 teaspoon bicarbonate of soda

1 teaspoon vanilla extract

1 Tablespoon white vinegar

1/3 cup vegetable oil

1 cup water

For the icing -

4 cups icing sugar

3 tbsp cocoa powder

A small jug of water

Method -

1. Combine the flour, sugar, cocoa powder, salt and bicarbonate of soda in a large mixing bowl.

2. In a separate bowl, combine vanilla, vinegar, oil and water.

3. Then add the wet ingredients to the dry ingredients and mix until completely combined and no lumps remain.

4. Pour the mixture into a greased 8x8 square tin.

5. Bake in a preheated 180 degrees Celsius oven for 30-35 minutes until a skewer inserted comes out clean.

6. Let the cake completely cool before icing.

7. To make the icing, combine the sugar and cocoa in a bowl and gradually mix in water until you reach a desired consistency - not so runny that it will slide right off the cake.

8. Top the cake with the icing and enjoy!
