Apple tart
There's something incredibly delicious about a simple apple tart. Nothing fancy, just melt in the mouth pastry filled with gorgeously vanillery apples.
Ingredients
For the pastry -
110g butter
220g plain flour
2 tbsp cold water
For the filling -
600g apples (I used 5 big Cox's)
50g butter
2tbsp caster sugar
2 tsp vanilla essence
beaten egg (for brushing)
Method
1. Make the pastry by rubbing the butter an flour in your fingertips until it resembles breadcrumbs.
2. Add the water a bit at a time and mix until a dough is formed.
3. Form into a ball, wrap in cling film and chill in the fridge for 30 mins.
4. Peel, core and thinly slice the apples.
5. Cook them gently with the butter, sugar and vanilla until golden (roughly 10 mins).
6. Drain them but keep the juices for later.
7. Preheat the oven to 200 degrees Celsius.
8. Roll out the pastry and press into a greased 22cm tart tin.
9. Brush the base of the pastry case with the beaten egg.
10. Place the apples in the pastry case and cook for 30 - 35 mins.
11. Once cooked, reheat the apple juices and pour over the tart.
12. Enjoy warm.
