Coconutty breakfast bars
I am utterly addicted to these gorgeous oaty bars because of their coconutty flavour that immediately transports me to the Caribbean and their ability to serve any situation. I eat them for breakfast quite often, a snack on the go or after lunch. They are so quick to throw together but do have to bake for about an hour so I'd suggest making up a big batch at the weekend to see you through the week.
Ingredients
1 x 407g can of condensed milk
250g rolled oats
75g shredded coconut
100g pumpkin seeds
200g dried apricot (most dried fruits work well).
Method
1. Preheat the oven to 130 degrees Celsius.
2. Line a 20x30 baking tin with baking paper.
3. Warm the condensed milk over a low heat.
4. Add all the other remaining ingredients.
5. Transfer to the tin.
6. Bake for about an hour.
7. Leave to cool before slicing up.
