Delicate chocolate macaroons
If you've read my 'About' page then you'll realise that I've tried making macaroons before and let's just say that it didn't quite go to plan!!! Moving swiftly on... I've since adapted the recipe and come up with this one which is so quick, utterly delicious and produces authentic looking macaroons. I really hope you try this recipe as they make a stunning centrepiece for any event or a really impressive present.
Ingredients
175g icing sugar
125g ground almonds
3 tbsp cocoa powder
3 large egg whites
75g caster sugar
Simple glacé icing / nutella / chocolate spread
Method
1. Preheat the oven to 160 degrees Celsius.
2. Line 2 large baking trays with baking paper.
3. Sieve the icing sugar, almonds and cocoa into a large bowl.
4. In a separate bowl/mixer whisk the egg whites for about 8-10 mins until stiff.
5. Then continue whisking and add the caster sugar a tablespoon at a time until stiff peaks are formed.
6. Fold in the almond mixture a half at a time until combined. Use a spatula to mix it in gently.
7. Transfer the mix to a piping bag and pipe domed circles onto the baking paper (2cm in diameter and leaving 5cm between each macaroon).
8. Before baking bang the trays on the table top to ensure a good 'foot.'
9. Bake for 10-15 mins then leave to cool.
10. Once cooled, remove from the trays (a palette knife is useful here) then fill with either icing or chocolate spread.
