Ultimate Coconut Granola
I had a sudden craving for granola the other day when the muesli I was eating for breakfast seemed unappetisingly soft and soggy! Anyway, I set about experimenting to create my own and came up with this wonderful recipe that satisfied my desire. Ingredients
3 cups of rolled oats
A pinch of salt
1/3 cup of raisins
1/2 cup of desiccated coconut
1/3 cup of honey
3 tbsp coconut oil
A few drops of vanilla extract
1/3 cup brown sugar
Method
1. Combine the oats, salt, raisins and desiccated coconut in a large bowl.
2. Then, over a low heat, melt the honey, coconut oil, vanilla extract and sugar.
3. Add the dry ingredients to the wet ingredients and combine thoroughly.
4. Preheat the oven to 180 degrees Celsius.
5. Line a large baking tray with baking paper or foil then spread the mixture out.
6. Bake for around 30 mins, mixing every 10 minutes.
7. Leave until completely cool then break up the granola and enjoy!
