Apricot Slices

I cannot even begin to describe how delicious these fruity slices are. They are the perfect compromise between a crunchy oat top and a gooey centre. If you're not an apricot fan then fell free to swap them with any other dried fruit - figs and dates also work really well.

Ingredients

200g dried apricots

Half a pint of water

280g butter

230g oats

230g dark/light brown sugar

230g wholemeal flour

Method

1. Roughly chop the apricots and place them in a small pan with the water. Simmer on a low heat for about 15 mins.

2. Meanwhile, melt the butter and sugar in a large pan.

3. Add the oats and flour then mix thoroughly.

4. Line a 12cm square baking tin with baking paper.

5. Pour in half of the oat mixture and press into the corners.

6. Pour the apricots on top, then cover with the remaining half of the oat mixture.

7. Bake at 180 degrees Celsius for 35 - 40 mins.

8. Once cooled, slice up and enjoy.
