Lime and sesame drizzle cake
It's July and so summer really should be in full swing but of course, we're in England so the sun has hidden, yet again! To brighten up everyone's mood at home I thought I'd attempt a light, refreshing cake in the hope that it might tempt the weather to perk up. I succeeded in the cake making but failed in the sun enticing so here we have it - a lime drizzle with added sesame seeds for a little crunch from Chetna Makan's wonderful book - 'The Cardamom Trail'.
Ingredients
1 tbsp black sesame seeds
150g butter
150g caster sugar
150g self raising flour
1 tsp baking powder
3 large eggs
zest of one lime
juice of half a lime
For the icing
10g icing sugar
2 tbsp lime juice
zest of one lime
black sesame seeds
Method
1. Preheat the oven to 180C and line a 900g circular (or loaf) tin.
2. Put the sesame seeds into a small tin and place in the heated oven for 5 mins then crush,
3. Cream the butter and sugar then add the flour, baking powder, eggs and lime zest and juice.
4. Mix until fully combined.
5. Bake in the oven for 30 - 40 mins until lightly browned.
6. Meanwhile - make the icing.
7. Mix the icing sugar and lime juice to the desired consistency.
8. Pour over the COOLED cake the sprinkle with zest and sesame seeds.
