Retro rock buns
If there's one bake that takes me back to when I was tiny it would be these rock buns - they're fruity, floury and oh so delicious. They're best eaten warm from the oven but can also be eaten a day later (if they last that long) with jam or marmalade.
Ingredients
225g self raising flour
1 tsp baking powder
100g butter
1/2 tsp mixed spice
50g demerara sugar
100g mixed dried fruit
1 beaten egg
1 tbsp milk
Method
1. Preheat the oven to 180C.
2. Rub the butter into the flour and baking powder with your fingertips.
3. Mix in the mixed spice, sugar and dried fruit.
5. Beat together the egg and milk then add to the dry ingredients.
6. Combine until it forms a stiff dough.
7. Spoon rough mounds onto a lined baking tray.
8. Bake for 15 mins until golden.
