Bounty Cake
My brother's newly found obsession is with chocolate bounty bars so when he started adding various ingredients to a plain sponge cake he was making, including cocoa and coconut, this bounty cake was born. It is unlike any other cake I've ever eaten, with a gooey centre and a subtle hint of coconut. I really recommend you try this as you'l never want to eat anything else, ever again.
Ingredients
250g butter
250g caster sugar
4 large eggs
125g ground almonds
60g dessicated coconut
60g cocoa powder
2 tbsp water
A few drops of vanilla essence
Method
1. Preheat the oven to 180C and line a circular cake tin.
2. Start by creaming the butter and sugar.
3. Then add the eggs and mix well.
4. Mix in all of the remaining ingredients until totally combined.
5. Pour into the prepared tin.
6. Bake for 20 - 25 mins until a skewer comes out clean.
