Jammy heart biscuits

Offer a few of these up as a present for Valentine's day (or any celebration) and you're on to a winner. Although I've made them into rather large biscuits for effect, you can easily follow the dough recipe and then choose any shapes. Likewise, the jammy filling is of your choice - I've used raspberry but strawberry, blackcurrant or even lemon curd would work too.

Ingredients

100g butter

175g caster sugar

1 tsp vanilla extract

1 egg

200g plain flour

A jar of jam

Method

1. Cream the butter and sugar. Then add the vanilla extract.

2. Beat in the egg.

3. Then add the flour and mix in thoroughly.

4. Form into a ball the roll it out to a depth of around 1cm.

5. Cut out the heart shapes, place on lined baking trays and then chill in the fridge for an hour.

6. Remove from the fridge and bake in a preheated oven at 180C for about 10 mins.

7. Once totally cool, spread one side with jam and sandwich with the other half.
