Gooey chocolate and pistachio cookies
I'm very picky about my cookies - I don't like them too dry, they can't be too thin, I prefer chocolate chunks to chocolate flavoured and there have to be lots!
I've used in these, pistachios and really dark chocolate to make them extra indulgent. If you prefer, you can use other nuts like walnuts or pecans or even leave them out entirely. Similarly, feel free to add some extra ingredients like dried fruit or mini marshmallows.
Ingredients
100g butter
100g light brown sugar
75g caster sugar
1 egg
1 tbsp vanilla extract
175g plain flour
100g pistachios (roughly chopped)
150g dark chocolate (in chunks)
Method
1. Preheat the oven to 180C and line 3 large baking trays.
2. Cream the butter and sugars.
3. Add the egg and vanilla and mix until smooth.
4. Add the flour and mix until a dough forms.
5. Then add the nuts and chocolate.
6. Using your hands, roll the dough into 4cm wide balls and place on the lined trays. (Make sure to leave around 5cm around the balls as they spread a lot)!
7. Bake in the oven for 15 mins until slightly golden.
8. Leave to cool slightly then enjoy warm!
