Healthy banana, chocolate muffins
These muffins came around by chance. I hadn't planned on making them earlier today, or baing anything in fact but when I saw the fruit bowl at breakfast the bananas were decrepit and sad-looking. There isn't any butter in these so they're actually pretty healthy and really easy too (great for little fingers).
Ingredients
2 large ripe bananas
2 tbsp golden syrup
1 tbsp vanilla extract
1 tbsp coconut or olive oil
1 egg
1 tbsp milk
1/2 cup of yoghurt
1 1/2 cups plain flour
1 tsp bicarbonate of soda
A pinch of salt
Method
1. Preheat the oven to 180C.
2. In a large bowl, mash the bananas.
3. Add the syrup, vanilla, oil, egg, milk and yoghurt then mix thoroughly.
4. Mix in the flour, bicarb and salt.
5. Divide into muffin cases then bake for 20 - 25 mins until golden and a skewer comes out clean.
