The best ever chocolate cake!!!
It's nearing the end of August and here in England the autumn is well and truly on its way. To prove the point: I was cycling home earlier this afternoon and got completely soaked by the rain so unlike any other person who would probably take a quick shower or hang up their wet clothes, I baked a cake! A chocolate cake seemed fitting in my shivering state so here we have the best ever chocolate cake, complete with fudgy icing.
Ingredients
175g butter
175g dark brown muscovado sugar (or caster sugar)
4 eggs
1 tsp vanilla extract
75g self raising flour
225g drinking chocolate powder
For the fudgy icing
50g butter
50g caster sugar
175g icing sugar
6 tbsp water
2 tbsp cocoa powder
Method
1. Preheat the oven to 180C and line 2 round tins.
2. To make the cake, cream the butter and sugar until light and fluffy.
3. Then add the eggs one at a time, mixing thoroughly between each.
4. Add the vanilla and then sieve in the flour and drinking chocolate powder.
5. Mix until smooth then pour into the prepared tins
6. Bake for 20 mins until a skewer comes out clean.
7. Leave to cool on a wire rack.
8. For the fudge icing, put the butter, caster sugar and icing sugar in a large pan with the water.
9. Heat until the butter is melted then add the cocoa powder.
10. Beat it really well then spread in the middle and on top of the cake.
11. The cake is best eaten a day later to give time for the icing to set!!!
