Ben's cookies
It is with immense satisfaction that I sit here, on my bed, writing this blog post. It's Friday evening and I'm home from school for the weekend so of course my attention has quickly been steered away from my A level subjects to far more important matters of cakes and baking.
Now for a little background behind the title of this... Last week I went to visit Oxford for the day and naturally, ended up in the covered market. It had been a long but lovely day wandering through the beautiful city so my Mum and I decided some sustenance was in need - we headed to the one and only Ben's cookies stall. For those of you who don't know 'Ben's cookies' has been around since 1983, baking with "chunks not chips"!!! Their cookies are beyond brilliant with a gooey centre and a crispy coating, beneath which are hidden puddles of melted chocolate. For years, I've wanted to re create them but after a multitude of attempts never quite reaching Ben's standards I began to lose heart.
Quite unexpectedly, I came cross the perfect recipe online and cannot wait to attempt the huge variety of flavours.
Although I did not create it, this recipe was really was too good not to share, so here we have it: The ultimate recipe for Ben's cookies!
Happy Baking xx
