Third Time Lucky Pancakes

Pancakes, pancakes, pancakes! Just the thought of this breakfast treat fills me with joy as I picture stacks of them, thick and fluffy, layered up and doused in maple syrup. When I was a younger, my Mum would make the really thin, crepe-like ones that my brother and I excitedly covered in lemon and sugar. I'm pretty sure we ate about 10 each at a time!

Recently however, I've been craving the thicker time an have been trying various recipes to fit my expectations. The first batch used banana in the mix and they ended up rather like fritters (yuck), the second was a tad more successful but I added too much milk so they were too thin. This Saturday morning, I've had the break-through that has been a long time coming. They're quick, they're thick and they're oh so fluffy. The secret ingredient...greek yoghurt! xx

Ingredients (Serves 1 - about 6)

1 egg

3/4 cup greek yogurt

1/2 cup plain flour

1/2 tbsp baking powder

oil for frying (I used coconut oil)

Method

1. In a bowl, whick the egg and milk together.

2. Then add the flour and baking powder.

3. Mix until smooth.

4. Add 1 tsp of oil to a frying pan on a high heat, until it's sizzling.

5. Then dollop spoonfuls of the batter in and leave for a minute until small bubbles appear on the surface.

6. Flip onto their other sides and fry for a remaining 1 minute or so, until golden.

7. Repeat with all of the batter (you may need to add more oil if the pan is getting dry).

8. Then pile them up high, add your favourite toppings and devour!!!
