Figgy Biscuits :)
I can't quite believe that haven't yet posted this recipe because these biscuits are my all time favourite. I think the original recipe came from my very first Usborne cook book so it has a dear place in my heart. I've played around with the ingredients since and fine tuned the recipe to produce the best ever oaty biscuits. There's nothing fancy, no complicated technique or extravagant ingredient but that's why they're so good and why I always make a double batch!
Ingredients (Makes about 20)
1 orange (zested first, then juiced)
75g dried fruit (chopped figs, apricots, dates or raisins)
75g plain flour
75g oats
1/2 tsp baking powder
50g chilled butter
70g soft light brown sugar
1 egg
Method
1. Preheat the oven to 180C and line 2 large baking trays with baking paper.
2. In a small bowl, add the orange zest and the the orange's juice.
3. Put the dried fruit in and leave to soak.
4. Put the flour, oats and baking powder in a large mixing bowl.
5. Using either your fingertips or a mixer, rub in the flour to produce a breadcrumb consistency.
6. Mix in the sugar.
7. Crack the egg into the big bowl and then add the orangey, fruity mixture.
8. Mix thoroughly.
9. Spoon the mix in tablespoon - sized dollops onto the baking sheets and bake for 15-20 mins until slightly browned and firm.
10. Transfer to a wrack to cool.
