Quick pancakes
I did a pancake post back in November where I shared my favourite recipe for quick, fluffy pancakes that used greek yoghurt instead of milk. A couple of weekends back I tried a different recipe that was so so good and has given my previous post some feisty competition.
These pancakes use oat flour to create the amazing thickness as well as upping the health - factor. But don't worry, you don't have to rush out to the shop and buy a sack of expensive flour, all you need is a back of cheap and cheerful porridge oats! Oh, and a blender :)
Ingredients (Makes 8 large pancakes)
2 cups porridge oats
1 large banana
2 tbsp golden syrup/honey
1 cup milk
oil for frying
Method
1. Blend the oats to a smooth, flour-like texture.
2. Mash the banana in a large bowl, add the milk and whisk well.
3. Add the syrup or honey and then mix in the oats.
4. Put a teaspoon of oil (I used coconut) in a pan and fry the pancakes for about 2 mins on each side until little bubbles appear in the surface.
5. Add your toppings and enjoy!!!!
