March Cookies
The past few days have been gloriously bright and springlike that I just had to celebrate with a new recipe!! This one is for peanut butter cookies and it's a winner! They're incredibly quick to make and bake, have a soft centre with a crispy shell and are even pretty healthy because they have barely any refined sugar and are oil and dairy free :)
Ingredients (Makes 26)
2 cups peanut butter (I used smooth)
1/2 cup brown sugar
2 tbsp black treacle
1 cup oat flour
1 cup plain flour
2tsp baking powder
50g dark chocolate (chopped finely)
Method
1. Preheat the oven to 180C and line two large baking trays with baking paper.
2. In a small bowl mix the peanut butter, sugar and treacle.
3. In a large bowl combine the two flours and baking powder then add the wet ingredients.
4. Using your hands, combine everything then mix in the chocolate pieces.
5. Roll into golf ball-sized balls then press down with a fork onto the trays.
6. Bake for 8 mins until the edges are slightly golden.
