Earl Grey banana loaf
This banana cake is so so delicious as well as being packed full of potassium and very low in saturated fat - what more could you want? I've used honey and dates instead of sugar and a handful of walnuts for added texture so this really is a must-try!
Ingredients
1 Earl Grey teabag
100ml boiling water
50g dried dates
50g walnuts
200g self raising flour
50g wholemeal flour
1 teaspoon baking powder
3 ripe bananas
2 eggs
50 ml honey
3 tbsp olive oil
Method
1. Preheat the oven to 180 degrees Celsius and line a 1.5 litre loaf tin with baking paper.
2. Make a mug of Early Grey tea with 100ml of boiling water then remove the teabag after 3-4 mins.
3. In a blender mix the dried dates and walnuts until chopped finely.
4. Put the flours and baking powder in a large mixing bowl. then add the nuts and dates.
5. Put two of the bananas, honey, eggs and the olive oil in the blender and mix until smooth then add to the flour mix and stir thoroughly.
6. Pour the mix into the prepared tin then slice the remaining banana in half and lay on top of the cake.
7. Bake for 50 - 55 mins then enjoy!
