Gooey Greek Yoghurt Brownies

Okay, so I have to admit that this recipe was a complete accident - I was planning to make my Mum's brownies earlier, that she's been making for years, but I'd used the last bit of butter for pastry (which will appear in my next post!) Anyway, I had a rifle through the fridge and came across some Greek Yoghurt that needed finishing so here we have it: my very own Greek Yoghurt Brownies! These are so gooey and addictive but the delightful thing, is that they are unusually healthy for a brownie. The Yoghurt I used was 0% fat and I've used dark chocolate instead of milk which we all know is pretty good for us right ?!

Last thing - I'm afraid I've done this recipe in cups as I find it so much simpler to get the right quantities that way, so if you don't have any cups then I'd recommend a small-ish teacup or a conversion table.

Ingredients

1 cup plain flour

1/2 tsp baking powder

pinch of salt

1 cup of dark chocolate broken into chunks

1 cup of caster sugar

1/2 cup cocoa powder

1 tsp vanilla extract

2 cups Greek Yoghurt

A handful of squares of dark chocolate (chopped finely)

A handful of walnuts

Method

1. Preheat the oven to 180 degrees Celsius and line a 20cm by 30cm tin with foil or baking paper.

2. Add the flour, baking powder and salt to a large mixing bowl.

3. Put the chocolate chunks in a small heatproof bowl over a pan of simmering water to melt.

4. Once melted, add the sugar, cocoa powder, vanilla extract and yoghurt then mix thoroughly.

5. Add the wet ingredients to the dry ingredients and combine.

6. Spoon the mixture into the prepared tin and sprinkle over the finely chopped chocolate and walnuts.

7. Bake for 30 - 35 mins.

8. Allow to cool before cutting then enjoy!
