Cracking Crispies
We went shopping yesterday and bought 3 huge boxes of rice krispies - crazy I know, but there was a special offer on and I haven't had them for ages. Before just eating them as cereal however, I had a sudden urge to make crispy cakes and what with Easter being just days away I wanted a trial run before the big day (okay, so maybe just an excuse to eat them..)!
Also - I'd used up the last of our cupcake cases so simply pressed the mixture into an ice cream scoop and placed them onto baking paper.

Here's the quickest, easiest recipe you'll find:
Ingredients:
30g butter
100g chocolate
3 tbsp golden syrup
100g rice krispies
A handful of mini eggs
Method
1. Melt the butter, chocolate and syrup in a large pan.
2. Mix in the rice krispies until fully coated.
3. Spoon into cupcake cases or press into an ice cream scoop.
4. Place on a baking tray, line with baking paper.
5. Top with a mini egg (I dipped the base in a little melted chocolate to make them stick).
6. Leave in a cool place for about an hour to solidify.
