Coffee Crumble Cake

Ok, if you like a bit of alliteration then this post is for you. Well, you've be a fan of coffee, cake and crumble too but who isn't?!!

This recipe is from a Great British Bake Off book and is my favourite from there so far. It's simple to make, a little bit different and more exciting than a classic round cake and is perfect for large events of picnics as it's so easy to slice up and serve.

Ingredients:

For the streusel

100g light brown muscovado sugar

50g plain flour

25g porridge oats

1 tsp cinnamon

50g unsalted butter

50g walnut pieces (roughly chopped)

For the sponge

2 tbsp instant coffee powder

2 tbsp boiling water

120g unsalted butter

180 caster sugar

2 medium sized eggs

200ml buttermilk (*)

250g plain flour

pinch salt

1/2 tsp baking powder

1/2 tsp bicarb.

(*) If you don't have buttermilk you can just put 200ml normal milk in a bowl, add 1 tbsp white wine vinegar and leave to thicken for 10 mins.

Method:

1. Preheat the oven to 180C and line a 30cm X 10cm rectangular cake tin.

2. To make the streusel, put the sugar, flour, oats and cinnamon in a mixing bowl then rub the butter in until it resembles breadcrumbs.

3. Add the nuts and set aside.

4. For the sponge, stir the coffee into the boiling water to dissolve it.

5. Cream the butter and sugar in a large mixing bowl.

6. Add the eggs then stir in the buttermilk.

7. Add the flour, salt, baking powder and bicarb. and mix until combined.

8. Pour half the mixture into the tin then scatter with half of the streusel.

9. Then pour over the remaining mixture and top with the remaining streusel.

10. Bake for one hour then leave until completely cool before removing from the tin.
