Long time no see!!
This is the first blog post in months and again it's the usual excuses I'm afraid - work, exams, commitments etc. but now that summer is so close I'm determined to update regularly and share lots of new exciting foodie ideas.
It was 30 degrees here in Kent today and it took me by surprise. Suddenly my room was unbearably hot, I had to dig out my shorts and forget the innumerable cups of tea that keep me giong through the day. No. Today called for water, lazing around outside and refreshing food. That's why I attempted my first experiment with chia seeds and made the most delicious, cooling jar of goodness ever!
I was so desperate to devour it that the photo opportunities were limited but here's a quick peak into what you're embarking on...
Ingredients
1 cup rolled oats
1 apple (grated)
1 1/2 cups milk
1 tbsp honey
2 tbsp chia seeds
2 cups milk
Method
1. First make the chia pudding by mixing the seeds and 2 cups milk in a bowl. It will look really runny but the seeds will soak up all the liquid. Then place the bowl in the fridge for at least 2 hrs.
2. In a different bowl mix the oats, grated apple, honey and 1 1/2 cups milk.
3. Pour into a jar and place in the fridge.
4. A few hours on, pour the chia pudding onto the oats then top with some frozen berries - yum!
5. Best eaten outside.
