Healthy brownies??
Brownies? Healthy? What do you mean? Have you gone mad?
Well no actually, I haven't... I do agree though, the concept is totally crazy and unimaginable but hold your horses and have faith - these brownies aren't full of beans or sweet potatoes, they don't replace sugar with "bee pollen" and they certainly DO contain chocolate but despite all this there's remarkably little saturated fat and a moderate amount of sugar so I dare you. Give them a go and you'll never look back!!
Ingredients
200g dark chocolate
100g coconut oil
100g ground almonds
100g plain flour
a pinch of salt
1 tsp baking powder
2 eggs
100g light brown sugar
75g chopped walnuts
Method
1. Line a 20cm square tin with baking paper and preheat the oven to 180C.
2. Start by melting the chocolate and coconut oil in a small heatproof bowl over a pan of simmering water.
3. Meanwhile, sift the ground almonds, flour, salt and baking powder into a large bowl.
4. In a separate bowl whisk the eggs and sugar for just a minute into frothy.
5. Pour the egg mixture into the dry ingredients and once the molten chocolate has COOLED DOWN add that too.
6. Fling in the walnuts, mix then pour into the tin and bake for 20 mins.
7. Once baked, leave to cool in the tin overnight then cut up and enjoy!! :)
