Spicy date and almond biscuits
These gooey treats were an entirely selfish creation as I confidently class myself as a date-oholic! I just can't get enough of these caramely fruits and I try to incorporate them into my baking as often as possible. The biscuits however were awarded top marks by both my Dad and brother - no mean feat so I'm sure you'll love them as much as we do!

Ingredients
200g pitted dates (any variety)
10g knob of ginger (peeled and chopped)
2 eggs
250g ground almonds
1/2 tsp bicarbonate of soda
1 tsp cinnamon
Method
1. Preheat the oven to 170C and line a large baking tray with baking paper.
2. Put the dates and ginger into a blender and whazz them up until a thick paste forms.
3. Add the eggs and blitz again until smooth.
4. Put the remaining ingredients in a large bowl along with the date paste.
5. Mix together then roll into small balls (golf ball sized).
6. Place these on the tray then gently press down with a spoon or the back of your hand.
7. Bake for 15 - 20 mins.
