Blonde beauties
Blondies - treats that are often deemed inferior to their darker counterpart but are in fact completely different and equally delicious. The light chocolate makes them appear lighter and thus more suitable for the summer months but my favourite aspect is their dense, squidgy texture that complements the crunchy walnuts perfectly!!
Ingredients
170g white chocolate
115g unsalted butter
100g caster sugar
2 eggs
125g plain flour
1/2 tsp baking powder
150g walnut halves
Method
1. Preheat the oven to 180C and line a 20cm square cake tin with baking paper.
2. Put the chocolate and butter in a large heatproof bowl and set above a pan of boiled water. Leave it off the heat though, to slowly melt.
3. As soon as the mixture is melted, stir to make smooth.
4. Add the sugar and stir in then leave to cool for a couple of minutes.
5. In a separate small bowl, beat the eggs then add to the chocolate mix and stir until glossy.
6. The add the flour and baking powder and thoroughly combine.
7. Throw in the nuts then pour into the prepared tin.
8. Bake for 20-25 mins until slightly firm to the touch and a skewer comes out clean.
