I'm back!!
It's been a long while since I posted a recipe on here and for that I am sorry. The good news however is that this one will have been worth waiting for (in my humble opinion at least)! I've made similar ones before I know but when I made these biscuits last weekend and the disappeared in a matter of hours, I thought it would be selfish to keep it to myself. So here we have gooey yet crunchy date and walnut cookies - perfect for autumn days.
Ingredients
180g oats
75g plain flour
60g walnuts (roughly chopped)
100g dates (stoned and chopped)
1 egg
90g butter
90ml honey
Method
1. Preheat the oven to 180C and line two large baking trays with baking paper.
2. Measure the oats, flour, nuts and dates into a large bowl.
3. In a small bowl, whisk the egg, butter and honey then add to the oat mixture.
4. Mix until thoroughly combined the place heaped tablespoons onto the baking paper (you may need to flatten with your hands).
5. Bake for 12-15 mins then set aside to cool.
