Lemony Snickets
So here we are people, 2018!! How on earth did that happen?
As the first recipe of the New Year there's a whole load of pressure riding on the crispy, golden backs of these sweet treats but trust me, they're worth it. Scented, crunchy, melting, fresh... are you tempted yet? This is the perfect recipe to wipe away any January blues and to welcome the new year with open arms (as well as secretly longing for Spring)!!
It's a Jamie Oliver special from his new, wonderful book - 5 Ingredients.
Ingredients (5, obviously)...
100g butter
100g caster sugar
50g polenta
150g self raising flour
1 large lemon (unwaxed)
Method
1. Preheat the oven to 180C and line 2 trays with baking paper.
2. Beat the butter and sugar in a mixed until creamy.
3. Then add the polenta, flour and zest of the lemon. Mix thoroughly.
4. Now add the juice of the lemon and combine to a dough.
5. Scoop a small handful of the dough, roll into a ball and press down lightly on a lined baking tray.
6. Bake for 10 mins till just golden.
7. Leave to cool (or not) then enjoy xxxx :)
