A chocolate kick
This is the only cookie recipe you'll ever need. A bold statement, I know, yet I can say with confidence that there'll be no looking back after the first batch. Think golden, gooey, melt-in-the-mouth cookies that have the perfect flop when you hold it up to take that initial bite. What's even better is the versatility of the recipe - just play around with the weight of chocolate: Throw in some nuts? A scrape of orange zest? A handful of raisins? The possibilities are endless, so enjoy!
Ingredients (makes 12)
110g unsalted butter
100g caster sugar
60g dark brown sugar
1 egg
1 tsp vanilla extract
190g plain flour
a pinch of salt
1/2 tsp bicarb.
100g dark chocolate
50g milk chocolate
Method
1. Cream the butter and sugars.
2. Then add the egg and vanilla.
3. Next, mix in the flour, salt and bicarb.
4. Throw in the chocolate and give a final stir before chilling in the fridge for an hour.
5. Once cool, roll out into balls (around 2 tbsp of dough) and gently flatten onto lined baking trays.
6. Bake in a preheated oven at 200C for 10-12 mins.
7. Leave to firm up for 5 mins then transfer to a wire rack to cool completely.
