Authentic Italian pizzas

Italy has got to be my favourite country - it's full of life, the people are magical, the scenery is to die for and of course the food is, well, italian...

Unfortunately however we can't all live in Italy, as much as I'd like to, but that doesn't mean we can't enjoy their incredible food. This pizza recipe makes enough for 3 big pizzas but can easily be doubled or quadrupled! I've included a list of my favourite toppings but it's up to you to experiment and find your favourite combo! I hope you like it.

Ingredients

For the pizza bases -

500g strong white bread flour

1 tbsp salt

7g of dried yeast

1/2 tbsp caster sugar

1/2 pint lukewarm water

For the tomato sauce -

2tbsp olive oil

1 clove of garlic (chopped)

1 400g tin of chopped tomatoes

Basil leaves

Toppings -

Chopped artichokes

Capers

Olives

Fresh basil

Method

1. Put the flour in a large bowl and make a well in the middle.

2. In another bowl/jug add the yeast and sugar to the tepid water and leave for a few minutes.

3. Then add it to the flour and mix until all the flour is combined.

4. When the dough comes together, tip onto a floured surface and knead for 10 mins.

5. Flour the top of the dough, put it in a bowl covered with cling film and leave in a warm place for 15 mins.

6. Now make the tomato sauce: heat the oil in a frying pan, then add the chopped garlic.

7. Cook for a few minutes then add the tomatoes and the basil.

8. Cook for a further 10 minutes until thickened.

9. Preheat your oven to 250 degrees Celsius.

10. Divide the dough into as many pizzas as you want.

11. Using a rolling pin, roll the dough into circular pizza bases.

12. Place on a lined baking tray, put on your toppings and cook for just 8-10 mins.
