Authentic Olive Breadsticks

We're having an Italian-themed supper party with friends tonight so of course, I saw it as an opportunity to try something new. I've never been a fan of shop bought breadsticks as they're so dry and dusty but on a recent trip to Italy I discovered the magic of their thick, aromatic and utterly delicious "grissini."

I'm a big olive fan so these breadsticks are studded with green olives. I can't wait to try the same recipe but using roasted peppers or sundried tomatoes instead...

Ingredients (Makes around 12)

250g strong white bread flour

5g salt

5g fast action yeast

200ml luke warm water

1tbsp olive oil

100g green olives (drained and rinsed)

Method

1. Put the flour into a large bowl then add the salt to one side and yeast to another.

2. Use an electric mixer to mix.

3. Add three quarters of the water and slowly combine.

4. Then add the remaining water and keep mixing until a wet dough forms.

5. Add the olive oil and olives and continue mixing for 2 mins.

6. Put the dough into a lightly oiled bowl and cover with clingfilm.

7. Leave in a warm place to rise for 1 - 2 hours.

8. Line 2 baking trays with baking paper and preheat the oven to 220C.

9. Spread the dough out into a rectangle and cut 3cm wide strips.

10. Bake for 10-12 mins until lightly golden and crisp.

NB - If you're not eating them straight away, they can be kept in an airtight container for a few days but be sure to crisp them up in the oven before serving.
